Stokes Sweet Potatoes – Are They Healthy?

The Molokai variety and Stokes Purple(r) are relatively new innovations. They were developed by the Decoite family in 1978 and are grown only on the Hawaiian island of Molokai.

The purple color isn’t dyed; it comes from the presence of an antioxidant called anthocyanin, which is also responsible for the color of red cabbage, red wine, and purple cauliflower.

Unlike other varieties, stokes sweet potatoes have a distinct flavor. The purple color, which is common in California, can sometimes confuse consumers. Thankfully, they are both sweet potatoes. The texture and taste of stokes is similar to that of regular sweet potatoes. In addition, both types of potatoes are high in fiber. Cut into 1-inch cubes, rinse and cover with water, and simmer on low for 15 to 20 minutes. Drain and season. You can serve cooked sweet potatoes as a side dish or add them to soups and salads. To make them more appealing, bake them and top with feta cheese and broccoli.

The purple-fleshed sweet potatoes are difficult to breed because they tend to be bitter and unpalatable. Nevertheless, the tests conducted so far have led to improved disease resistance, yield, and flavor. Next week, California-grown Stokes Purple will be available in Bristol Farms and Sprouts stores in Southern California. The sweet potato will be twice as expensive as regular sweet potatoes, but you can rest assured that it’s 100% natural.

Where Are Stokes Sweet Potatoes Grown?

The first commercial sweet potatoes were grown in the Merced County area in the 1940s. Then, in the 1970s, farmers began growing other types of sweet potatoes. The first commercially grown type was the white sweet potato. In 2003, a farmer approached Sizemore with a plan to grow a new variety. The result was a purple variety that is now the fastest growing of all the sweet potatoes grown in California.

There are a number of reasons to grow Stokes purple sweet potatoes. The purple color is the result of anthocyanins, which are the same pigments that give blueberries their color. This sweet potato has a high nutritional value, but is more difficult to bake than most varieties. It is more dense and takes longer to cook than other varieties. The taste is earthy and pleasant, with a rich flavor. It is one of the best sweet potatoes available in the United States.

Where are Stokes purple sweet potatoes grown? Most of the U.S. sweet potatoes are produced in North Carolina. They are known for their deep purple color. They retain this color when baked and are often available in Sprouts or Whole Foods. Trader Joe’s and other retailers carry the sweet potato. You can find this delicious food at your local grocery store or even at the supermarket. But if you are not near a farm, you can still find it online.
