The name “Hill Country Red” okra refers to okra that is red in color. It is also a reference to the limestone hills surrounding the Austin/San Antonio area.

This type of okra likely originated in Brazoria County, Texas, which was home to an active slave trade and many plantations that quickly adapted to new food sources. During the early days of the okra’s development, this variety was probably considered to be a weed and not a food plant.

This heirloom okra is best grown in southern Texas, where it thrives in the hilly areas. It grows up to six feet tall and is very prolific. The okra pods are firm and flavorful, with a classic okra taste. The okra grows in a straight-up fashion, much like corn. Harvesting Hill Country Red okra is a breeze because the green, tender pods are picked when they are between two and three inches. They mature in about 60-70 days and are excellent for frying.

Hill Country Red okra is a Texas heirloom okra variety. This okra has dark red stems and a red-purple fruit. It has a classic okra flavor and is a good pickling variety.
